Cross Cut Shanks are cut taken from the leg of the animal. Because the meat comes from an area that gets a good workout, the muscles in the shank start off a bit tougher. But when you braise or slow cook this cut for a long period of time, you get a delicious, fall off the bone meal thats packed with unique flavour you can't find in other parts of the animal. A very popular dish in Italy to make Ossobuco.
